Banana fritters in coconut batter

2-4

20 mins

Super Easy

Banana fritters are probably one of the most common street snacks you can find in Thailand, simply because bananas are grown everywhere. My recipe is really simple, but I can’t say it’s healthy. This is definitely a treat for special occasions.

Ingredients

  • 300g rice flour

  • 400ml tablespoons coconut milk

  • 50g granulated sugar

  • 125g fresh shredded coconut meat (leave out if you can't find it)

  • 1 teaspoon nigella seeds

  • 6 small bananas, halved

  • 500ml vegetable oil, for deep-frying

  • Honey or ice cream, to serve

Method

  1. Put the flour and coconut milk into a bowl and mix well to form a smooth batter. Stir in the sugar, then the coconut and the nigella seeds. Add a little water if the batter is too thick – you want it to be nice and gloopy.
  2. Peel the bananas and cut them in half lengthways. Now put the oil in a wok over a medium heat. When the oil is hot, coat the banana in the batter, then gently place a few at a time in the oil. Deep-fry for about 10 minutes until golden brown all over.
  3. Remove the fritters and drain on kitchen paper. Serve drizzled with honey or with a bowl of ice cream.
