Banana fritters are probably one of the most common street snacks you can find in Thailand, simply because bananas are grown everywhere. My recipe is really simple, but I can’t say it’s healthy. This is definitely a treat for special occasions.



Ingredients

300g rice flour

400ml tablespoons coconut milk

50g granulated sugar

125g fresh shredded coconut meat (leave out if you can't find it)

1 teaspoon nigella seeds

6 small bananas, halved

500ml vegetable oil, for deep-frying

Honey or ice cream, to serve
Method
- Put the flour and coconut milk into a bowl and mix well to form a smooth batter. Stir in the sugar, then the coconut and the nigella seeds. Add a little water if the batter is too thick – you want it to be nice and gloopy.
- Peel the bananas and cut them in half lengthways. Now put the oil in a wok over a medium heat. When the oil is hot, coat the banana in the batter, then gently place a few at a time in the oil. Deep-fry for about 10 minutes until golden brown all over.
- Remove the fritters and drain on kitchen paper. Serve drizzled with honey or with a bowl of ice cream.
